Preparing corn flour pancakes

We went for brunch at Atlántico, a Spanish restaurant in Boston (https://maps.app.goo.gl/yhNKsvG8r1tbG87u7). Our son loved the pancakes so much that he asked the waiter for the recipe. The waiter was very amused by that and went ahead and wrote it down on a piece of paper. That was how we got started on this project!
